A television expert has now challenged this habit head-on, explaining why this well-intentioned response actually damages the material – and outlining a far better, straightforward care routine.
Why boiling wooden kitchen utensils is a bad idea
Wood is seen as durable and natural, so many people assume it can withstand almost anything. When hygiene is a concern, they often choose the most drastic measure they can think of: boiling wooden utensils in vigorously bubbling water for several minutes, sometimes adding washing-up liquid or vinegar.
A specialist appearing on a TV breakfast programme strongly advises against this approach. Boiling causes changes inside the wood that are not immediately visible, with the damage only becoming apparent over time.

The expert says that heating causes the tannins contained in wood to leach into the water. This not only turns the liquid brown, but also alters the wood’s structure. Its pores open up and moisture penetrates deep inside, leaving the utensil soft and spongy afterwards and more prone to cracking.
For chopping boards and spatulas in particular, which are already exposed to considerable temperature changes, this accelerates ageing. Rather than becoming more hygienic, they develop cracks and grooves where germs can thrive.
How repeated soaking affects hygiene
Damp, swollen wood takes longer to dry. If residual moisture remains within it, this creates ideal conditions for bacteria and mould spores. Eventually, the board may look stained and unattractive on the outside, and can sometimes develop a musty smell.
After boiling, wet wooden utensils are often put straight onto the worktop or hurriedly placed in a cupboard. This gives them even less opportunity to dry completely. Anyone who believes they have thoroughly disinfected the item may actually be creating fresh hygiene issues.

The clever alternative: gentle cleaning, fine sandpaper and a little oil
Instead of using an aggressive heat treatment, the expert recommends a simple, much gentler routine. It essentially involves three steps and can be carried out using household products.
Step 1: Everyday cleaning with a mild product
For daily use, lukewarm water and a gentle washing-up liquid are sufficient. Those who prefer can use traditional household soap. A sponge or soft brush will reliably remove fresh food residues.
For stronger odours or after handling greasy foods, a splash of household vinegar can be useful. It cuts through grease and has a mildly disinfecting effect. It is important to rinse the wood thoroughly afterwards, so that no soap or vinegar residue remains.
Step 2: Deep care with fine sandpaper
At regular intervals – depending on how often the item is used, roughly every few weeks or months – the expert recommends a type of “mini restoration”. For this, he uses fine sandpaper, such as 180-grit paper.
“A quick sand with fine paper removes the worn top layer – leaving the wood smooth and hygienic again.”
Always sand in the direction of the grain. Just a few strokes are enough to remove stains, grey areas or slightly rough patches. Then wipe away the sanding dust thoroughly with a dry cloth.
Step 3: Protection with cooking oil
Finally, the spoon or board receives a form of protective seal. A neutral, low-odour edible oil is suitable, provided it is approved for consumption, for example:
- refined sunflower oil
- grapeseed oil
- specialist food-safe care oil for wooden kitchen utensils
Put a few drops onto a soft cloth and rub them in thinly until the wood has an even, slight sheen. After a few minutes, remove any excess with a clean cloth so that no sticky surface develops. The oil conditions the fibres, makes them more resistant to moisture and gives the wood a smooth feel.

Many experts now regard wood as a clearly better option than plastic. This is due to increasing concerns about plasticisers and other chemical components that may be released from plastic when heated.
A well-known doctor recently issued a strong warning about everyday plastic spoons and spatulas. In his view, certain substances in plastic are suspected of affecting the hormonal system. These include:
- an increased risk of genital malformations in boys
- the possible encouragement of early puberty in girls
- links with hormone-dependent cancers such as breast and prostate cancer
This doctor’s demand is clear: plastic should disappear from kitchens wherever possible, particularly in places where it is heated intensely – such as frying pans, saucepans or microwave ovens.

- Stand items up or lean them upright to dry, allowing air to circulate.
- Use fine sandpaper on discolouration or rough surfaces.
- Apply a thin layer of cooking oil at regular intervals.
If you own badly damaged or cracked boards, they should not be used indefinitely. Deep cracks are difficult to keep clean, so replacement is worthwhile. For everyday use, a small basic selection of wooden utensils works well: a stirring spoon, a spatula, one chopping board for vegetables and another for bread – enough for most households.
